    cool down. Keep the concentrate for couple of days. It will not harden. Keep for several weeks, it will still not harden. Jaggery never hardens on its own but it can from crystals as a natural-age progression. Like in olden day for storage purposes, natural hardens like choona ( lime ) was used to harden the jaggery.

To meet up with the rising demands of block jaggery or powdered jagger, it becomes necessary to use tough chemical hardeners such as Sodium bicarbonate, Zinc formaldehyde sulfoxylate (ZFS), Sodium hydro phosphide, Calcium carbonate… the list get longer each time. These approved chemicals, steps up production by reducing the preparation time of jaggery making. Also, block jaggery and powdered jaggery make it easy for transportation and handling as compared to the natural form of jaggery that is liquid.
